Chicken Tikka Masala Recipe

Image
This is based on two recipes on Damn Delicious and Cafe Delites that were relatively quick and easy but I felt like didn't taste enough. My partner asked me lately whether I prioritize the heat level of a (spicy) dish over its actual flavor, and I think it's a false dichotomy. I love the taste of spice! I'm not a freak about eating the hottest peppers possible or whatever. I just think spicy things taste good and I love the warm feeling in my mouth and stomach when I eat spicy food :) So this is my chicken tikka masala recipe! It's not authentic, but neither is tikka masala. I know what I am and what I like. I'd love to add paneer to it, which was a suggestion by my partner to make the best tikka masala of both worlds (iykyk lol), but I need to figure that out first. No investigation, no right to speak! Chicken Marinade It's best to marinade the chicken overnight, but I've done ~2 hours before. Just marinade for any chunk of time at all tbh. You'll be ...

Updated Mac & Cheese Recipe

Hi all! I've updated my mac & cheese casserole recipe after experimenting with it for this year's Thanksgiving, and also made a printout sheet to share with my partner's mother and her sister. Hope it comes handy for others!   Happy Thanksgiving! :)

Cinnamon Cocoa Cookies

I have made this recipe five times in the last week: first for some friends, then for my partner, then for her friends, and then for even more of her friends. Not complaining, though, because they're delicious! And it makes me really happy to make and share with other people. Think of this as an application of my " variable cookie recipe ". That is, totally make it, but also think about how you would make your own cookies! Baking is really fun and easy, and it helps if you think of it as something that expresses you and your own taste. Chocolate and cinnamon are "me", but what's "you"? I'm really excited at the thought of having people over to hang out over fresh cookies. Maybe you might consider making some for your game night? Recipe Here's the recipe! It makes about 2 dozen cookies depending on how big you make them, though I've managed to stretch it into about 30 cookies (since my partner's baking sheets are smaller than mine). ...

Variable Cookie Recipe

I've been getting really into baking cookies as a way to regulate my own sweet-eating proclivities and also surprise my partner. Going to keep this updated as I experiment more! Base Recipe This is what you need to make a cookie without anything fancy going on about it. Ingredients 2 cups all-purpose flour. 1 tsp baking soda. ¾ tsp salt. 1½ stick of butter (12 tbsp or 6 oz). ⅔ cup light brown sugar. ⅔ cup white sugar. 1 large egg. 2 tsp vanilla extract. Directions In medium bowl, combine: flour, baking soda, salt. Put aside. In large bowl, mix 1 stick (8 tbsp) butter and sugars. Mix egg and vanilla extract. Mix flour mixture from step #1, slowly. Add ½ stick (2 tbsp) melted butter. Cool for at least 1 hour. Preheat oven to 375° F. Grease baking tray and scoop cookie dough. Bake for 12 minutes. Cool for 5 minutes. Additions In a way, this is kind of the important part! You can do one or multiple of these things. If the dough looks and tastes good, you're good. Salmonella is a so...

Southern Mac & Cheese

This is a cross between two recipes. One of them required more ingredients that I don't usually have in my apartment [1], and the other one was like super plain and also locked behind a paywall once you open the website a couple times [2]. Literally like if you don't have any spices, what's the point? Anyway, posting it here is easier than having notes on my phone or a text file on my computer! Goodbye recipe screenshots. I'd probably want to give the first recipe a go for Thanksgiving though, for like the extra effort. I want everyone to love me for it and promise not to be rude to me as a person. Maybe this will persuade them! (Half-joking.) Ingredients 8 oz elbow macaroni. ¼ cup (1 stick) butter. 1 large egg. 2 tbsp flour. 1 cup whole milk. 1 tsp cayenne pepper. 2 tsp garlic powder. 3 tsp onion powder. Salt and pepper. 2 cups shredded cheddar cheese. 1½ cup Mexican blend of cheeses. French onions (optional). Directions Preheat oven to 350° F. Cook pasta al dente. Put...
